Description
In a privileged corner of the Ribera del Duero, where the seasons mark the rhythm with almost liturgical precision, Pago de los Capellanes decided one day not only to make wine, but to pay homage to the land with a singular vineyard: El Nogal. This site, planted exclusively with Tempranillo (Tinta Fina), is a profound monologue on the character of a specific plot. The story goes that the founders, the Rodero-Villa family, did not seek volume or ease here, but rather to express the pure essence of an estate with an identity. The Pago de los Capellanes El Nogal vineyard, at 850 metres above sea level, lies on clay-limestone soils, where the vines struggle and take root, generating grapes of restrained power and natural tension.
The Ribera del Duero gives this area its most extreme stamp: harsh winters, dry summers, and a thermal oscillation that provides nerve and precision. The interesting thing about the El Nogal vineyard is that, despite the harsh climate, it offers unsuspected elegance. In difficult years, the winemaking team has taken radical decisions, such as harvesting during the waning moon or making more restrictive selections than usual, renouncing volume to maintain the purity and harmony of the wine.
Winemaking
The grapes are harvested by hand, selected bunch by bunch in 15 kg crates. On arrival at the winery, a second selection is made on the table before being transferred to stainless steel tanks for spontaneous alcoholic fermentation with indigenous yeasts, without additives. The pumping-over is delicate, almost surgical, allowing a slow extraction, more based on infusion than aggression.
Ageing is carried out for 22 months in new, fine-grained French oak barrels, chosen from different cooperages to give the wine layers and nuances without over-saturating it with wood. During this time, a light bâtonnage is practised and the evolution of the wine is constantly monitored, with a non-interventionist but attentive philosophy. Bottling is carried out without aggressive stabilisation or filtering, in order to preserve the texture and soul of Pago de los Capellanes El Nogal.
Taste
In Pago de los Capellanes El Nogal the nose opens slowly, with a sober profile of noble austerity. Ripe black fruit -plum, wild blackberry- merges with a spicy and balsamic background reminiscent of dried laurel, graphite and pipe tobacco. There is something earthy, deep, reminiscent of damp undergrowth and black truffle. There is no superficial perfume, but rather an aromatic density that requires time and silence to unfold.
On the palate, El Nogal does not burst in, it glides. A silky, almost restrained entry that quickly gains breadth without losing its tension. The tannins are very fine, dusty, but present, like the invisible structure of a cathedral. There is volume, yes, but also a surprising, almost Atlantic freshness that lengthens the palate and gives it energy. Notes of bitter chocolate, liquorice, cassis and a dry, chalky minerality, reminiscent of vineyard dust in summer.
The finish is very long, serene, with echoes of incense, wild mint and cold ash. It is not a wine for immediate applause, but for those who know how to listen to the nuances and enjoy the silence between sips. A Tempranillo of introspection, of pause, of nobility without artifice.
