The 2014 Villamarta is their more iconic wine, a single-harvest Palomino kept under flor in bota for almost 10 years. They select the finest grapes from each pass through the vineyard, and they select the barrels for their finesse and aging potential. 2014 saw normal yields and was a mild year. The grapes for this 'palma'-style wine are usually picked in early September and see six to seven hours of sun drying, then pressed lightly and fermented in bota, where the wine matured under flor for nine years and then spent six months without flor in a more oxidative style. It has 15% alcohol with 5.81 grams of acidity. It's close to a Fino Amontillado, a Tres Palmas (which appears on the label), massive, sapid but with freshness and elegance. It finishes with a bitter and salty twist in the finish. 480 bottles produced. It was bottled in March 2024.

The Luis Pérez Villamarta wine, an oenological jewel of the Luis Pérez winery, is a reflection of the elegance and finesse that characterises great wines. This wine stands out for its meticulous winemaking and exceptional ageing, elements that contribute to its unique and distinctive profile.
Luis Pérez Villamarta is characterised by a mild spring and summer, with a typical rainfall of the region, conditions that favoured the elegance of the wines of that year. The Villamarta is a single varietal, made from 100% Palomino Fino, an indigenous variety that gives the wine a unique identity. The 40-year-old vineyard is cultivated using a special pruning method known as "moflete", a traditional technique in Jerez. This method, together with a soil of albariza de barajuelas, contributes to a limited yield of approximately 5,000 kg/ha, ensuring high quality grapes.

Winemaking

The grapes are harvested continuously for almost two months, selecting clusters at different stages for different types of wines. In the case of Villamarta, fermentation reaches 15 natural degrees in barrel, and ageing is focused on restricting the wine's contact with oxygen rather than on reducing the alcohol content and glycerol. This ageing process is carried out without adding sulphur, maintaining the purity and authenticity of the wine.

Taste

Luis Pérez Villamarta is a wine that stands out for its finesse, complexity and harmony. It has notes of lemon, aniseed, mint and esparto grass, with a touch of reductiveness. The silky texture of the wine is achieved by bâtonnage, a process that consists of suspending the dead heads or yeasts. This wine promises to develop gunpowder and reductive notes over time, ageing gracefully in bottle. Inspired by the wines of the 1940s and 1950s, Villamarta is a wine that, according to the winery's experts, has the potential to age for 50 years, making it a timeless classic. With a limited production of 1,200 bottles, this wine represents an oenological treasure for connoisseurs and wine lovers.
