Description
Eduardo Torres Versante Est Carricante is a white wine that contrasts acidity due to its altitude and perfect Mediterranean ripeness. It is made from the Carricante grape variety by the Torres Acosta winery in Sicily.
It is a wine elaborated under biodynamic processes, totally committed to the purely natural and manual work in the vineyard. At the Eduardo winery, the winemaking process is quite meticulous and non-interventionist, which is why the harvest is carried out manually.
Winemaking
The winemaking process of this wine is artisanal and biodynamic, the alcoholic fermentation is done with spontaneous yeasts. The ageing takes place in a variety of containers, such as cement tanks.
The maceration of the skins is 5 days, while the ageing is 8 months in Slovenian oak foudres in a quantity of 6 to 10 hectolitres. Racking is kept to a minimum so that there is no need to use additives, not even sulphur.
Taste
This wine is characterised by a fruity and floral aroma, while on the palate it has a freshness and a medium-bodied fragrance. It presents pleasant mineral sensations and an incredible acidity.
A wine with great aromatic intensity
The grapes used in Versante Est Carricante come from vineyards that are on average between 45 and 50 years old, located at 650 metres above sea level. The presence of loose soils formed by volcanic ash makes it an exquisite wine with the presence of indigenous varieties.
It is a wine with a very good ripening of the grapes, for this reason it is perfect to share at dinners with friends, and ideal to share with semi-cured cheeses, fish dishes and white meats, among others.
