Destemmed by hand and aged on the skins for one year and, after pressing, for three months in tanks, the intensely golden-yellow but cloudy 2020 Faust Cuvee MMXIV offers a pure, intense and fresh nose with floral and grassy aromas underlined by ripe and aromatic fruit with notes of bitter oranges. Pure, dry and tight on the palate, this is a bit austere for my tastes, but it's structured, saline and elegant. The wine doesn't open up today, but there is a serious structure and complexity that give hope for a more sustainable finish in the future. Bottled in early September 2021. 12% stated alcohol. Natural cork. Tasted at ProWein in Düsseldorf in May 2022.

Description
In the heart of the Loire Atlantique, on orthogneiss soils that vibrate with an almost electric mineral energy, Domaine de L'Ecu has been working for decades with an unshakeable conviction: the wine must be the voice of the place. Domaine de l'Ecú Faust represents this philosophy in its purest form. Pioneers in organic farming since 1975 and biodynamic since 1998, they took risks when almost no one was talking about it. Faust was born from this radical philosophy: to interpret Chardonnay from the purity of the soil and minimal intervention. In these south-east facing plots, caressed by the Atlantic influence, the vines struggle on poor, stony soils, deepening roots and concentrating character. The work is done by hand - ploughing, leaf removal, simple Guyot pruning - seeking precision and life in each cluster.
Winemaking
Harvesting is entirely manual at Domaine de l'Ecu Faust, this biodynamic white wine. The bunches are carefully destemmed and vatted. Fermentation is carried out with indigenous yeasts, with no corrections or artifices. The key lies in its prolonged maceration: the wine spends 12 months in amphorae in contact with the skins. This bold decision transforms the profile of the Chardonnay, giving it structure, depth and an enveloping texture that is unusual in a white wine. The amphorae allow for gentle micro-oxygenation, without adding external aromas. It is not filtered or clarified; it is bottled preserving all its energy. It is a wine that requires patience: ideally two years of minimum ageing and ample potential for evolution.
Taste
In the glass, Domaine de l'Ecu Faust has a slightly brick-red hue, reflecting its ageing and maceration. The nose is expressive and complex: ripe fig, quince, dried apricot and sultana notes intertwine with bitter orange peel and a delicate spicy background evoking saffron.
The entry of Domaine de l'Ecu Faust is frank and very dry, with a marked tension. In the middle of the palate it gains breadth and volume, with fine, polished tannins that give structure to the whole. The acidity, precise and vibrant, sustains the palate and adds freshness. The finish is long, saline and slightly bitter, with hints of dried fruit and sweet spices. A deep, gastronomic, characterful Chardonnay that rewards your attention with authenticity and earthy elegance.
