Description
Les Jardins de Babylone is one of the most representative wines of the Domaine Didier Dagueneau winery, a winemaker renowned for its exceptional whites. This wine comes from the Jurançon region, in the southwest of France, where the Petit Manseng grape variety is grown, known for its natural acidity and its ability to ripen while maintaining an excellent balance of sugar and freshness. The vineyard is situated in a natural amphitheatre at the foot of the Pyrenees, in an idyllic setting reminiscent of the mythical Hanging Gardens of Babylon, which inspired the name of the wine. The terroir of this area is unique, composed mainly of flint soils (a mixture of clay and flint), which adds a marked minerality to the wine.
Winemaking
Viticulture at Les Jardins de Babylone follows biodynamic and organic principles, with absolute respect for the environment. The grapes are harvested by hand in order to select only the grapes at their optimum ripeness. The wine is fermented in barrels, using indigenous yeasts, and aged for at least five years in foudres, special barrels specifically designed to preserve the freshness and vibrant character of Petit Manseng.
Taste
Les Jardins de Babylone is an extremely complex and memorable wine. On the nose, aromas of exotic fruits, such as mango and pineapple, mingle with citrus notes and light hints of fresh herbs. On the palate, its bright acidity is remarkable, bringing freshness and energy, while its texture is dense yet delicate. The finish is long, with a marked minerality, a reflection of the terroir where the vines grow. It is a wine that strikes a surprising balance between power and elegance, with a remarkable cellaring potential that promises to continue to develop for years to come.
This dry wine from Jurançon is ideal with grilled white meat dishes or light sauces, as well as being an excellent choice for oily fish or even more complex preparations such as lightly spiced Asian dishes. It also pairs very well with goat cheeses or desserts that are not too sweet, allowing its bright acidity and minerality to balance with the flavours of the dish.
