Description
La Réserve d'O Hissez O is a cuvée that invites us on an expansive journey, a voyage of the senses. This cuvée is a statement of intent and a promise of superior quality, marking its place among the region's most cherished wines.
Under the distinguished Terrasses du Larzac appellation, Hissez O is defined by its protected and prestigious origin.
Winemaking and ageing
Composed of 60% Syrah, 30% Grenache and 10% Cinsault, this wine represents a balanced blend that gives it a unique and profound personality.
Stemming from stony, clay-limestone soils at an altitude of 400 metres, it displays a distinctive minerality, a true reflection of an exceptional terroir.
The wine is made using indigenous yeasts and follows a 30-day maceration process. Traditional vinification is carried out without the use of additives, thus ensuring its purity and authenticity. Aged in 340 litre oak barrels for 22 months, allowing the wine to develop a deep and complex character while maintaining its freshness and vivacity. With moderate use of added sulphites at bottling, this wine comes across as authentic and natural.

It is the ideal accompaniment to a leg of pork leg, bringing out the richness of the meat with its structure and fruity notes. It combines deliciously with apple, chocolate or low temperature leg of lamb, balancing the intensity of the dish with its elegance and freshness.
