Description
Ganevat Côtes du Jura La Barraque is an aged white wine made from the well-known Savagnin grape variety by the Ganevat winery in the Jura region of France.
The excellent Savagnin grape variety comes from old vines grown organically with a natural, non-interventional process in the background of clay-loam plots.
Winemaking
For the elaboration of this white wine, the grapes were selected in the vineyard by hand and the transfer to the winery was done in a careful way to preserve the grapes. Alcoholic fermentation is carried out spontaneously with indigenous yeasts.
It is vinified protected from the air with indigenous yeasts for 2 years in barrels, on lees. The vinification process is natural, without intervention, with indigenous yeasts, without fining, without filtering and without adding sulphites.
Taste
This white wine has a masterful balance and great aromatic and taste complexity. It is also fully concentrated, with floral notes that express great freshness and superb finesse.
On the palate, it is beautifully unctuous, with a forceful acidity and extraordinary persistence. The finish is chalky, with good depth.

Ganevat Côtes du Jura La Barraque is the product of the exhaustive work of oenologist Jean François Ganevat who took over the family estate in 1998, which has a long winemaking tradition.
This aged white wine can accompany a meal of spiced lobster or langoustine with lemongrass after an hour of decanting.
It can also be the perfect accompaniment to meals such as trout, stuffed with spinach and fresh goat's cheese and ideal as an accompaniment to pleasant moments alone or in company.
