Description
Encarinyades wine is defined as a drink with a marked personality, but very difficult to classify, as it is neither red nor white. What is known is that it is one of the last wines produced by this winery.
It is made from three types of carinyenas grown in the same plot, where not only the techniques that respect the philosophy of its creator Salvador Batlle were applied, but also experiments with the application of creative and modern processes.
Elaboration
This wine, like the others in the catalogue, is certified as natural, as it has no added sulphites and follows the ecological and biodynamic criteria of its creator.
The grapes are harvested by hand, as the farmer ensures that the fruit retains its skins for the fermentation phase, which has a positive impact on the flavour and texture that characterises the wine.
The three varieties of grapes are fermented together in clay amphorae with indigenous yeasts. This period can last between 5 and 8 days of maceration, and then the wine is aged.
The ageing phase is carried out on its fine lees where it ages for 3 months and finally bottled until the moment of its distribution and subsequent consumption.
Taste
The Encarinyades wine is defined by experts as a wine with a complex aroma, with hints of red fruits and floral touches, balanced with a mineral background. On tasting it is fresh, light and with perfect acidity.
