The red 2021 Los Peros Garnacha is stunning. It's a single-vineyard wine from a 90-year-old plot of vines planted on pink granite soils. It's not a shy wine, as it achieved very good ripeness, full development of aromas and flavors and 15% alcohol, but it managed to keep the balance, poise and elegance. It has notes of cherries in liqueur, Mediterranean herbs and dry flowers. It's complex and has depth, very fine tannins and pristine flavors that give it a very long and tasty finish. This also represents very good value for money. It had a longer élevage—two years in 3,000-liter oak foudre. 3,900 bottles produced. It was bottled in October 2023.

Description
The wine Ca' Di Mat Los Peros Garnacha comes from a recovered vineyard in the municipality of San Martín de Valdeiglesias. It is an internationally admired wine due to its delicacy and elegance, which make it a sincere wine.
Its name comes from the occupation of the old vineyards of about 80 years old called Los Peros. All this created by the couple Paolo and Victoria, accompanied by Curro and Jesús, who carry out a non-interventionist winemaking process.
Winemaking
The wine Ca' Di Mat Los Peros Garnacha is made with grapes from different vineyards with small granitic soils, different orientations and altitudes reaching 850 metres above sea level, which seeks the greatest expression of the terroir. The grapes are macerated for 60 days and fermented spontaneously with indigenous yeasts.
They are grown using environmentally friendly agriculture and the vines are surrounded by fruit trees, forests and orchards. Half of the wine is aged in concrete and the other half in French oak barrels.
Taste
The red wine Ca' Di Mat Los Peros Garnacha is flowing, floral and fresh in aroma and the nose is intense with small herbal and floral hints. In the mouth it becomes very balanced, with a vibrant minerality allowing a salty taste.
A light and elegant jewel
The wine Ca' Di Mat Los Peros Garnacha is characterised by a very limited production and for being a red wine with very fine tannins and a strong mineral character. Ideal to be served with white meats and red meats at dinner with friends.
