The grapes for the no-sulfur-added white 2018 Arbois Savagnin Amphore were destemmed by hand, fermented with a five-month maceration, half of them in 420-liter French amphorae and the other half in Qvevry, and then pressed. Then, equal parts of the wine matured in barrel and French amphorae for six months. It's an orange wine with a deep color, quite cloudy, there's something earthy, a sensation of clay that makes it a bit powdery/rustic. The skin maceration has marked it greatly, with notes of quince paste and yellow flowers, marked tannins and a bitter finish. This is more about the process than the grape or place. Not quite my cup of tea.

Tissot Arbois Savagnin Amphore is a unique expression of viticulture in the Jura, France, under the expert guidance of Bénédicte and Stéphane Tissot. This wine is distinguished by its production in amphorae, an ancestral technique that highlights the purity and expression of the terroir. Savagnin, an emblematic variety of the region, is grown here on clay soils of the Trias, with vines about 20 years old, under biodynamic practices certified by Ecocert and Demeter.

Winemaking

The grapes are harvested by hand, followed by a six-month maceration in 400-litre amphorae, with no sulphur added and with fillers, which contributes to its distinctive organoleptic profile.

Taste

Tissot Arbois Savagnin Amphore reveals a particularly attractive visual, olfactory and gustatory intensity. Its golden colour, with orange reflections, displays a range of aromas including dried fruits such as walnut and hazelnut, apricot, citrus zest and candied fruits. On the palate, it is full and straight, with a remarkable persistence on noble bitterness that promises varied and exquisite gastronomic pairings. This wine is ideal with savoury fish dishes or roast poultry, offering a complex and refined taste experience.
