The 2021 Les Graviers Chardonnay is always a favorite of mine. It's Chardonnay from a site below La Tour de Curon with lots of limestone that gives the wine the salty and tasty character within the transparent and precise Tissot style, yeasty and with austere minerality. This was still in barrel and will be blended and bottled when they get the 2023 harvest in the cellar.

Tissot Arbois Chardonnay Les Graviers is a pure and elegant expression of the Chardonnay grape, grown in the heart of the Jura region of France. This wine is the result of a meticulous selection of grapes from seven different vineyards, each bringing its unique signature to the character of the wine. These vineyards are planted on Bajocien limestone scree soils, mostly covered by Lias clays, which gives the wine a distinctive complexity and minerality.

Winemaking

The winemaking of Tissot Arbois Chardonnay Les Graviers follows biodynamic practices, with Ecocert and Demeter certification, ensuring a respectful and sustainable approach at every step. The grapes are harvested by hand, followed by spontaneous fermentation and ageing in 228-litre oak barrels, a fifth of which are new, for 12 months. This careful and detailed process reflects Bénédicte and Stéphane Tissot's commitment to quality and authentic expression of terroir.

The aromatic palette is a blend of floral notes, yellow fruits, spices and a slightly smoky touch.
