The grapes for the 2018 Pinot Noir Sous La Tour come from a limestone-rich plot near the Tour de Curon. The grapes fermented with full clusters and indigenous yeasts in open oak vats, and the wine matured in 228-liter oak barrels for one year. It's livelier than the En Barberon, more complete with more ripeness but without excess, and it has a strong chalkiness that makes it beautifully textured.

This wine, a single varietal Pinot Noir, reflects the uniqueness of its origin, specifically the limestone hillside Les Corvées sous la Tour.

Winemaking

Manual harvesting and a careful selection of grapes begin a winemaking process that includes a three-week maceration in truncated cone-shaped wooden vats, followed by ageing in oak barrels for one year, 15% of which are new. This traditional method, complemented by light sulphiting and the absence of filtration, ensures the wine's integrity and authentic expression.
