One night and one day was the time the skins were allowed to macerate with the must in the old times, and it's the name given to the entry-level Giró (the local strain of Garnacha), the 2016 Una Noche y Un Día. It's a mix of purchased grapes from younger and older vines in the Jalón Valley fermented in stainless steel with indigenous yeasts and part of full clusters bottled after the winter. It's a primary, fruit-driven and straightforward wine, with a floral nose and a palate with unnoticeable tannins and a tasty finish. This would be the style of wine people produced for their own consumption, using shared lagars with a short maceration, as the zone was dominated by Moscatel (or raisins or almond, figs...). 2,500 bottles were filled in March 2017.
