One of the newer single-vineyard reds, produced only for the second time, is the 2017 Cruz Santa, a pure Vijariego Negro picked less ripe and fermented with 100% full clusters. It was produced with grapes from 20-year-old vines in the zone of Suertes de la Cruz Santa. It fermented in plastic bins and matured in used 500-liter oak barrels for 14 months. This has a peachy quality, very elegant and with an electric palate. It is expressive and develops nicely with time in the bottle. Both Vijariego Negro and Baboso Negro have been harvested earlier since 2016, a year of big changes in the wines in general, and it really changes the profile of the wines produced with these varieties, this one and Los Pasitos. This is expressive, impressive, showy, elegant and floral, really attractive. It's superb, one of the best in the portfolio. Only 600 bottles were filled in December 2018.
Between 16ºC and 18ºC
Fermented with indigenous yeasts in open vats with whole harvest (full clusters). Malolactic fermentation and ageing for 11 months in 500 liter old French oak barrels.
