Description
SantYuste El Carrascal is a natural white wine made from the Verdejo variety in vats by the Bodega Esmeralda García winery in Santyuste, Segovia (Castilla y León).
SantYuste El Carrascal comes from very old vines with an average age of 130 and 180 years planted on gravel and boulder soil and under the protection of the surrounding houses of a place that is 800 meters above sea level.
Elaboration
The grapes are harvested by hand. In the winery, the grapes are pressed directly and are not racked. They then begin spontaneous fermentation with indigenous yeasts in earthenware jars.
The wine remains there on its lees for 6 months. Finally, the wine is bottled without filtering or stabilisation.
Taste
SantYuste El Carrascal is a white wine with fruity aromas, herbal and spicy notes. In the mouth it is enveloping, sweet and deep. A fresh and unctuous wine in balance. The finish is long and very salty.
An aromatic and fragrant wine
SantYuste El Carrascal is a natural white wine without intervention, aged in earthenware jars by Bodega Esmeralda García.
Esmeralda García went to her family's village to make wines with the Verdejo grape variety. This variety has been planted in sandy soils, in some vineyards that are between 140 and 200 years old.
The vineyards have poor soils, and the vines are worked with a philosophy of minimum intervention resulting in exceptional wines, true verdejos.
In the gastronomic field, this wine is especially recommended for business lunches and as an accompaniment to fish rice dishes, grilled vegetables and baked white fish.
