The NV La Bien Pagá wears the subtitle Manzanilla Muy Pasada, denoting a Manzanilla of very old age selected from one single butt within the Reserva for the Manzanilla La Goya from Delgado Zuleta. It's a Manzanilla from Pago Balbaína on its way to becoming an Amontillado, believed to be aged for an average of 14 years, so the flor is now very weak and the wine is pungent, saline, powerful and balanced. It has a dark gold-amber color and a mixture of caramel, esparto grass and brine, starting to show some nutty hints from the light oxidation. The palate is powerful with pungent flavors. Apparently bottle time has polished some of the iodine and salty edges that it had early on. It has a long finish. This is a profound and powerful wine, not really a young and fresh Manzanilla, but one that could handle powerful food. 950 500-milliliter bottles and nine magnums were filled in this first bottling of April 2017. The lot is not easily identifiable (L-10797), but in the future if they do more bottlings, the labels will have clearer references to the bottling date.
