Description
De Moor Chablis L'Humeur Du Temps is an exclusive white wine from the Alice and Olivier De Moor Winery in Chablis Burgundy, France. It is a wine made from 100% Chardonnay, the most famous white wine variety in the world.
The clusters for the elaboration of this wine come from a plot of about one hectare with an average age of 25 years old located on limestone soils that give it all the characteristics of the area.
Winemaking
The grapes are harvested by hand in small crates to preserve the integrity of the grapes during transport to the winery. The must ferments under its own indigenous yeasts.
The wine ages in 228 and 500 litre barrels for twelve months. After this time the final blend is made and the resulting wine is bottled by gravity without fining or filtering.
Taste
De Moor Chablis L'Humeur Du Temps is an extraordinary wine with a fruity and floral flavour and some sweet touches from the ageing. It develops with roundness and unctuousness.
It is powerful but not heavy, with excellent acidity and a captivating minerality. It is the ideal wine to savour gourmet dishes.
