Description
De Moor Bourgogne Aligoté is an exclusive white wine from the Alice and Olivier De Moor Winery. It has been made exclusively from the Aligoté variety which comes from two 2.5 hectare plots in the French town and commune of Chitry in the Burgundy region of France.
The vineyard was planted in 1996. Its soil is of a calcareous type resulting in wines of unsurpassed quality; the terroir has been named Champagne.
Winemaking
The grapes are grown without the use of pesticides or other chemical products foreign to the land. The grapes are harvested by hand in small boxes to preserve the integrity of the grapes during transport to the winery. Subsequently, the grapes are gently pressed and fermentation takes place spontaneously with indigenous yeasts in stainless steel tanks.
Malolactic fermentation takes place and is aged on the lees without stirring in enamelled steel tanks. The resulting wine is aged for 11 months in foudres and oak barrels that are usually between one and four years old.
Taste
De Moor Bourgogne Aligoté is a white wine of medium intensity, with a very interesting vibrant and citric final sensation. In the mouth it develops with a great fresh and tasty flavour, good balance and excellent aroma.
