Description
To speak of Cascina Degli Ulivi Mounbè is to speak of authentic Italian winemaking tradition. This red wine stands out for its elaboration and long ageing, which gives it unique characteristics.
The red varieties used for its production are: Barbera (85%), Dolcetto (10%) and Ancellotta (5%). These grapes come from clay-limestone and clay-ferrous soils, and are the result of the blending of different plots cultivated under biodynamic practices. Harvesting takes place at the end of September, and the grapes are harvested by hand in small 20kg boxes.
Winemaking
Mounbè undergoes a 5-week maceration and fermentation process on the skins, with 2 pump-overs per day. After fermentation, the wine is aged on its fine lees in 2,500 and 5,000 litre oak barrels for 24 months, and then in 500 to 700 litre foudres for a further 24 months. It is important to note that indigenous yeasts are used and no sulphites are added. Furthermore, the wine is not filtered and clarification is carried out by natural decantation.
Taste
Cascina Degli Ulivi Mounbè is characterised by aromas of black fruits with a hint of vanilla. In the mouth, it is deep, balanced, silky but fresh, and leaves a lingering aftertaste. Stefano Bellotti, the creator behind this wine, describes it as a wine with a feminine but extrovert personality, a "wine of light". It is extreme in all its expressions, but presents itself in a soft and gentle way. It is ideal with spicy meats, sauces and winter meals. It also has an ageing potential of over 15 years.
