Description
UBE Miraflores wine comes from Sanlúcar de Barrameda, Cádiz, in the region of Andalusia, known for its unique terroir and its proximity to the Atlantic Ocean that confers a special delicacy to its wines. This wine is a single varietal, made entirely from grapes of the Listán variety, also known as Palomino. The grapes are selected from five plots of vineyards ranging in age from 35 to 110 years old, located in the Miraflores estate, at altitudes of 45-65 metres above sea level. The albariza soil where they are grown, with varied textures of lentils, lustrillos and tosca cerrada, is crucial to the character of this wine.
Winemaking
The production of UBE Miraflores follows traditional methods with a modern twist. The grapes are harvested by hand and pressed in full bunches into old barrels, where the must ferments spontaneously without temperature control. After fermentation, the wine rests for nine months in the same barrels, developing an initial veil of flor that persists for several months, contributing to its complexity. This process reflects winemaker Ramiro Ibáñez's commitment to reviving Jerez's winemaking traditions and exploring the possibilities offered by albariza, through his Cota 45 winery, known as "albarizatorio".
Taste
The taste of UBE Miraflores is an authentic expression of its land. On the nose, it displays intense aromas reminiscent of mojama and salicornia, with a chalky background, evidence of its chalky origin. On the palate, the wine is super saline, with a texture that faithfully reflects the albariza terroir. It is smooth, round and clean, with a lingering finish where notes of old American oak emerge, adding an extra layer of complexity and length to the taste profile. Generally bottled within a year of harvest, this wine is ready to drink from the time it is released, although it can also be cellared, which can further enrich the palate.
