The fourth vintage of the Listán Negro from a plot that tends to produce very elegant wines, the 2018 El Chibirique is only 12% alcohol after a vinification that was similar to other reds, with 100% full clusters in concrete with indigenous yeasts and, in this case, with a maceration of 24 days. The élevage lasted 11 months and was in used 500-liter oak barrels. This is the highest plot of the lower section of the property, with a northwest orientation. There is a touch more rusticity here, and in 2018 I found more finesse in La Solana. There is an herbal and very primary touch too that transported me to the wineries when the new wine is fermenting, delicate and tender. 2,200 bottles were filled in November 2019.

Description

Suertes del Marqués El Chibirique is a production from a small plot that reveals the minerality, intensity and purity of Tenerife. It is a single plot red wine with the autochthonous variety.
This wine aims to revive the winemaking tradition of the area in the most respectful way possible. Its name pays homage to the vineyard from which the Listan negro grape from which it is made comes.

Winemaking

The vines used to make the wine are between 60 and 80 years old, planted in volcanic soil and trained using the braided cordon system, at an altitude of between 380 and 420 metres with an eastern exposure in the shape of an amphitheatre.
To make El Chibirique, fermentation is carried out with indigenous yeasts in open plastic tanks. Malolactic fermentation takes place in French oak barrels.
The wine is aged for 10 months in French oak barrels of the same type with capacities of 500 and 228 litres. Environmentally friendly agriculture is used and harvesting is completely manual.

Taste

It is a wine that captures all the senses, presenting a garnet colour, with mineral aromas, damp earth and hints of gunpowder that perfectly represent the essence of the islands. The sensation in the mouth is intense, smooth and very silky, being well structured.

Definitely El Chibirique offers a magnificent opportunity to enjoy a very exclusive wine that seeks to respect traditions, as it avoids using as few chemical products as possible in the elaboration of this wine. It manages to become an excellent choice to accompany an aperitif or to accompany grilled fish, vegetables, red meats, rice and pasta dishes.
