NThe 2017 La Vallada is now sold without the Arlanza appellation of origin, from where the grapes were sourced at 900 meters in altitude from vines averaging 35 years of age. It's a ripe and serious Tempranillo fermented with 20% full clusters and with only 20% of the volume matured in barrique. It has very integrated oak, ripe fruit without excess and a soft mouthfeel representing a warmer vintage. It's medium to full-bodied with abundant, fine-grained tannins and a chalky mouthfeel.

Description

La Vallada is an exclusive red wine from Olivier Rivière, which originated in the vineyards of Covarrubias, Burgos, at an altitude of 1000 metres above sea level. It is one of the most accepted diversities of the winery, as it integrates the oak very well and its composition is sensible.
The must used is produced under magnificent conditions, so it has a fresh and robust texture.

Winemaking

This presentation is the mere result of a vintage made on the basis of mature and formal Tempranillo. The treatment is manual, on vines that are at least 50 years old. Likewise, this process is done in small boxes and each plot is vinified separately.
Indigenous yeasts are used in tanks of at least 1000 litres. French oak barrels are filled and the wine is aged for 12 months.

Taste

La Vallada is intense, long and, above all, fresh. Rivière's meticulous winemaking process does not include much cellar intervention. Of course, it integrates the oak perfectly, and at the same time the fruit is present, albeit in a very subtle way; not to mention how thick this red wine is.

A wine typical of Tempranillo

The Tempranillo used in this vintage comes from 100% organic vines, which are up to 100 years old. Its woody notes enhance the vinification of this type of grape. It is a robust drink, with abundant tannins and a chalky mouthfeel.
