Description
Costadilà 280 slm is a rediscovered gem, an old wine with a golden or rather orange colour. Like our ancestors, it is made from white and red grapes. It is remarkable for its unfiltered maceration, racking and bottling, fermenting in the bottle with its own yeasts- no sulphur is added!
The grape varieties used for 280 slm are: Glera, Bianchetta Trevigiana, Verdiso, Perera, Boschera. They come from a vineyard with clay and marl soil dating back to the 1970s in Campea di Miane, with a yield of 5.000 kg/ha.
Winemaking
Fermentation is spontaneous and the skins are macerated for 30 days in stainless steel tanks. Subsequently, it is aged for 3 months in oak barrels, followed by a final decanting in stainless steel tanks. Bottling is carried out with the addition of must.
Taste
The result is a wine with an intense golden yellow colour. It gives off fragrant aromas of fresh yeast with clear notes of tropical fruits and floral aromas. The palate is juicy, with soft, fresh tones and a pleasant mineral flavour. It has a good persistence. It is the ideal companion for Venetian aperitifs: toast with creamy cod, boiled octopus, half an egg with anchovies and sardines in onion sauce.
