Description
SantYuste La Fuentecilla is a natural white wine made from 100% Verdejo grapes by the Esmeralda García winery in the Castilla y León region of Spain.
La Fuentecilla is a paraje wine, that is to say, it comes from Verdejo grapes from the plot of the same name, planted on fine sandy soils on the slope towards the river where springs flow, which gives a more open and sweet profile.
Winemaking
The grapes are harvested by hand, as all the vineyards are goblet-trained and the winemaking process is carried out without the use of additives or yeasts. Once the grapes arrive at the winery, they are partially destemmed and prepared to make the marvellous SantYuste Fuentecilla wine. The grapes are pressed directly without racking and the resulting must ferments spontaneously with indigenous yeasts in earthenware jars.
There it remains with its lees for 6 months in earthenware jars. Finally, it is bottled without fining, filtering or sulphiting.
Taste
SantYuste Fuentecilla is a white wine with delicious fruity aromas, dry herbaceous notes and subtle spicy hints. In the mouth it is pleasant, sweet and volatile. A wine with balanced acidity and volume until the finish. A Verdejo with an open and sweet profile.

SantYuste Fuentecilla is a young white wine aged in earthenware jars by Bodega Esmeralda García.
This winery applies techniques based on respectful agriculture, where the use of pesticides and chemicals has been avoided.
Gastronomically speaking, it is a wine especially recommended for a romantic dinner and as an accompaniment to fish and white meats.
