Description
Ratapoil Va Donc is a dry white wine made entirely from Chardonnay grapes from organic vineyards in the Arbois region. This wine is remarkable for its natural winemaking, which includes fermentation with indigenous yeasts and without chaptalisation, followed by ageing on lees in old oak barrels. Vinification is carried out with the minimum of interventionism, avoiding filtering, gluing or sulphur additions.
Winemaking
The production of Ratapoil Va Donc is carried out under the supervision of Raphaël Monnier, a passionate winegrower who started his adventure in winemaking about two decades ago and is today recognised as one of the most emblematic producers in the region. Monnier is committed to certified organic practices and owns 5 hectares in Arbois and 8 more in various communes, noting that 70% of his vineyard is planted with red varieties, an unusual proportion for a region where whites predominate.
Taste
The taste of Ratapoil Va Donc captivates with its delicate balance between elegance and richness, with a restrained depth. Notes of stone fruits and spices stand out on the palette. The sharp acidity of this wine ensures a long, lingering and refreshing finish, making it ideal both as an aperitif and as an accompaniment to fish dishes, light meats, seafood, vegetables and various appetizers.
