Description
Ratapoil L'Ingénu is a wine that encapsulates the essence of Pinot Noir, grown on plots of clay and limestone soil in Molamboz, France. This wine stands out for being made from 30 year old vines, facing north, which brings a unique character to the vintage.
Winemaking
In the winemaking process, the grapes are manually destemmed, followed by a maceration that lasts 15 days. Subsequently, the juice is transferred to vats for a year and then to old barrels for an additional year of ageing. This method ensures a robust and elegant structure, where floral and fruity notes of the forest, such as raspberries and blueberries, predominate, accompanied by a subtle touch of leather and dried leaves.
Taste
When tasting Ratapoil L'Ingénu, one initially perceives its freshness and elegance. On the palate, the wine is savoury and saline, with an interesting wet stone nuance that complements the freshness of red fruits such as raspberry, blueberry, redcurrant and pomegranate. The acidity is medium-high, contributing to a perfect balance with the medium tannins and body of the wine. This flavour profile makes Ratapoil L'Ingénu not only pleasant to taste, but also complex and memorable, highlighting its ability to pair perfectly with hearty dishes such as confit lamb shoulder. Its ageing potential is considerable, with a recommended ageing period of 4 to 8 years, suggesting a favourable evolution in the bottle.
