In case readers weren't aware, Bin 707 is always aged in new American oak, like Grange. The 2018 Cabernet Sauvignon Bin 707 features plenty of vanilla on the nose, backed by concentrated cassis fruit. It's full-bodied, velvety and richly tannic, clearly meant to have two decades (or more) of longevity. Marked by ripe fruit, a notable lack of herbaceousness, and lavish oak, it's out of step with current trends in Australian Cabernet Sauvignon, but it's no less delicious and all the more unique for that.

Penfolds Bin 707 is a perfect representation of the Penfolds house style through the prism of Cabernet Sauvignon: intensely flavoured fruit; fully fermented and matured in new oak; expressing a Penfolds understanding of sourcing fruit from multiple vineyards and multiple regions.
Bin 707 had its first vintage in 1964. The wine was not produced from 1970 to 1975 (when fruit went to other Penfolds wines) nor in 1981, 1995, 2000, 2003 or 2011 (when fruit of the required style and quality was not available). Full-bodied and with proven ageing potential, Bin 707 holds a secure place among Australia's best cabernets.

Taste

Penfolds Bin 707 has a deep purple-red colour. On the nose, there is an automatic impression of Cabernet varietal fruit, aromas of blackberry ice cream, black forest pie, dark black cherry, kirsch and hints of pana cotta. Oak ageing contributes aromas of sandalwood, incense and whetstone graphite. On the palate, there is a solid core of Cabernet, with fruit up front and a wrinkled concentration of black olive. Texturally, it feels like the fine weave of a tapestry, with natural rhubarb/blueberry acidity wrapped around a mesh of slippery tannins. Despite the 100% new oak, there is a sense of skin and seed tannins. Completely, a dark chocolate graininess, cedar and savoury disposition contribute to the layering, length and longevity potential of this wine.
