Description
The white wine Muster Graf Sauvignon is a tribute to nobility and tradition. The term "Graf" in German means Count, a title that has been associated with the estate since its beginnings. Sepp and Maria wanted to honour this name in one of their wine lines. For their "Graf", they chose old vines planted in the poor soil of Opok. Since time immemorial, the varieties Zweigelt, Morillon and Sauvignon Blanc have grown in these special vineyards. For them, Graf also symbolises the centre, as the vineyard is located between the higher Sgaminegg and the slightly lower Opok.
Winemaking
The vines are about 40 years old and grow in a soil composed of Opok, a mixture of limestone and clayey silt, in its poorest and rockiest form. The wine is made exclusively from Sauvignon Blanc. The grapes are harvested by hand, destemmed and gently pressed. Fermentation is carried out in 2,400 litre oval wooden barrels with indigenous yeasts. Subsequently, the wine is aged for approximately 2 years in neutral oak barrels. It is bottled without fining or filtering, and no sulphur is added.
Taste
Muster Graf Sauvignon is characterised by a pronounced mineral note, accompanied by hints of peach, Meyer lemon and a silky texture. Its acidity lingers, making it a real delight. Served at 12-14° and left to breathe for an hour, it displays aromas of flinty minerals with hints of cedar, herbs, cured lemons, green apple, white pepper and a hint of dried meat.
