Matassa Ace of Spades Les Myrs is a natural red wine made from Monastrell and Carignan grapes. It is also part of the catalogue of the Matassa winery, located in the Roussillon region. As all the wines produced by this winery, Matassa Ace of Spades Les Myrs is defined as a traditional wine because of its manual elaboration, without the intervention of chemical products.
Winemaking
The grapes used to produce this particular wine are grown in vineyards where the low flora and vegetation of the area grows, which has a beneficial influence on the nuances of this drink. In addition, it also has a particular taste of the Mediterranean Sea.
Its cultivation is very particular, as it is defined as sustainable and biodynamic. In this process, up to 18 hectolitres of this marvellous wine can be extracted per hectare. From the moment the fruit is harvested, it can be described as a handmade wine. Moreover, it has a great influence on the volcanic soils with black marl from a mythical plot called "Les Myrs".
It has a short maceration of 4 days and is aged for 5 months on its lees in concrete tanks. It is bottled without filtering or fining, and of course, without additives or sulphur.
