Description
Les Crestes is a red wine made with the Grenache, Carignan and Syrah varieties by the Mas Doix winery, located in the town of Poboleda (Tarragona), in the north-east of Priorat.
The Grenache grapes come from vineyards with an average age of 20 years, and the Cariñena grape is centenary, being Sarah the youngest.
The vineyards were planted on slopes located 400 metres above sea level on slate soils with a laminar structure called "licorella".
Winemaking
The grapes are harvested by hand in small boxes of 10 kilograms. The grapes are transported to the winery to avoid breakage and unwanted fermentation. Once in the winery, the grapes are sorted berry by berry on a double sorting table. Each plot of land is vinified separately.
Fermentation is carried out using the "submerged cap" system at a controlled temperature. This consists of keeping the "cap" or solid matter from the grapes that rises to the top in the must during fermentation.
After the winemaking process, Les Crestes is aged in second year French ultra-fine grain barrels for 10 months. The wine is neither clarified nor filtered, and rests for several months in the bottle.
Taste
Les Crestes stands out for its intense, fruity and herbal aromas. It is an expressive, fresh wine with excellent acidity. It has a long and persistent finish, with mineral and balsamic hints.
