Description
Françoise Bedel Comme Autrefois sparkling wine comes from the Champagne region. This champagne, bottled with cork and from a selection of barrels, is a true tasting ritual. It combines depth and different levels of perception, making it a unique experience for the palate.
Winemaking
Françoise Bedel Comme Autrefois champagne stands out for the maturity of its vines, which range in age from 25 to 60 years. These vines grow in terroirs composed of clay, silt and limestone marl, which gives them unique characteristics and a distinctive vinous expression.
As for its composition, this champagne is made up of 20% Pinot Noir, 45% Pinot Meunier and 35% Chardonnay.
Alcoholic fermentation with indigenous yeasts and malolactic fermentation is carried out in oak barrels. After fermentation, the wine rests on its lees in the bottle with a natural cork stopper for the second fermentation and foaming for the next 13 years. This champagne has a final dosage of 2,50 g/l of sugar, a total acidity of 5.24 g/l and a total SO2 of 36 mg/l.
Taste
Françoise Bedel Comme Autrefois is characterised by an elegant and complex bouquet. Its aromas are reminiscent of country flowers and herbs, quince, lemon tart, tart apricot, umami, mushrooms, sherry and brioche. The palate is delicious, rich and multi-layered.
