Tasted at the Disznóko vertical in London, the 1993 Tokaji Aszu 6 Puttonyos is a blend of 60% Furmint, 10% Zéta and 30% Hárslevelu, the first vintage where the estate had some control over production, though much of the grapes were purchased unlike nowadays. I last tasted this debut in 2013, though this bottle was not quite at the same level. It has a deep cherry wood appearance in the glass. The nose is pleasant with cola, mint and earl grey and wild mushroom infusing the honeyed fruit, a little fatigued since I last tasted it but still pleasant. The palate is perhaps more interesting than pleasurable, though that is overshadowed by the significance of this maiden vintage in post-communist Hungary and what it portended. The fruit has dried out a little and there is now some bitterness towards the marmalade and quince-led finish, an almost latté character on the aftertaste. I suspect that there might be some bottle variation given the circumstances in which this wine was made. Tasted September 2016.

Disznókö Tokaji Aszú 6 Puttonyos is a masterful expression of Hungarian winemaking, a wine that combines tradition, technique and terroir. Produced exclusively from Furmint grapes, this wine benefits from the rich concentration and substantial quantity of the vintage. After a cold start to the year and an early spring, the growing season was marked by alternating periods of rain and warmth. Despite the weather conditions, the grapes reached early maturity, allowing botrytis to develop intensively on fully ripe grapes.

Winemaking

The meticulous selection of aszú berries took place between mid-September and the end of October. These berries were stored in stainless steel tanks until vinification. Most of the berries were macerated uncrushed in actively fermenting must for two days. Then, after prolonged pressing, fermentation took place in stainless steel tanks or oak barrels until early December. The wine was aged for two years in 225-litre oak barrels, with 10% in new oak and 90% in barrels of various vintages.

Taste

When looking at this wine, it reveals a light golden colour with green hues. The nose displays aromas of stone fruits, especially white fruits and melon, complemented by spices such as vanilla and clove. On the palate, it is rich, subtle and pure, with a fresh, round acidity. It has a medium body, a balanced sweetness and a long, spicy finish with an elegant bitterness.
More than just a dessert wine, Disznókö Tokaji Aszú 6 Puttonyos is an experience in itself. Its lively acidity balances the sweetness, making it perfect for pairing with a wide variety of dishes, from foie gras to white meats with creamy sauces, fish and mildly spicy East Asian dishes. It is also excellent with mature cheeses and fruit-based desserts. Undoubtedly, a ready-to-drink wine but with a significant ageing potential, which can reach 30 years or more.
