The harvesting process for the production of Derain Saint-Aubin 1er Cru Les Combes au Sud is carried out manually and fermented spontaneously with indigenous yeasts in French oak barrels. Finally, it is aged in the barrels where it is fermented for a period of 14 months.

The road to greatness
Dominique Derain is the creator of fabulous wines, including the fascinating Derain Saint-Aubin 1er Cru Les Combes au Sud. He started out as a barrel maker and a few years later decided to enter the world of winemaking.
Then in the late 1980s Dominique Derain decided to develop as a winemaker. In 2016, Dominique, already a legend, sold his winery to two young employees who saw him as a master.
Today these new owners are working on the continuity of Dominique Derain, respecting his legacy and what he learned with his mentor.
