Derain Saint-Aubin 1er Cru En Remilly wine is produced on the sunny, rocky slopes of Chassagne-Montrachet, using Chardonnay grapes. The area known as "En Remilly" is located in the extreme south of Saint-Aubin and also includes part of Chassagne-Montrachet.
This region has a climate and soil particularly suited to the production of high quality wines, with a sunny exposure and rocky limestone soil. These characteristics make this wine particularly valuable in Burgundy.

Winemaking

The Derain Saint-Aubin 1er Cru En Remilly wine is made by a process that includes manual harvesting, destemming, alcoholic fermentation in used barrels with yeasts from the region and malolactic fermentation. All these steps contribute to giving the wine its unique flavour and characteristics.
Hand harvesting involves picking the grapes by hand, which can be more careful and precise than using machinery; destemming involves removing the stalks from the grapes. Alcoholic fermentation, which in this case is carried out in used barrels and with indigenous yeasts.
