Description
Cos Sicilia Pithos Bianco is produced in the Fontane region of Vittoria, in the southeast of Sicily, this wine is a reflection of the island's unique terroir. It is made exclusively from the 100% Grecanico grape variety, grown in vineyards at an altitude of 230 metres above sea level. These vineyards, with a planting density of 5,000 vines per hectare, have an average age of 12 years, which gives the wine maturity and character.
Winemaking
The red soil of medium consistency, formed by sub-apenine sands of Pliocene origin, of limestone-siliceous nature, intertwined with compact layers of fresh clay and siliceous sand, is the home of these grapes. The pruning system used is Guyot, and agriculture is biodynamic. The grapes are harvested in September, and fermentation is spontaneous in terracotta amphorae, with indigenous skins and yeasts. This amphora fermentation process, together with bottle ageing, gives the wine its distinctive character.
Taste
Cos Sicilia Pithos Bianco is a great representative of Sicilian orange wines. When poured, it presents itself with a cloudy orange colour in the glass. On the palate, it surprises with a pleasant fruity bitterness. Notes of orange peel , apple, white peach and honey intertwine in a harmonious dance.
