Description
Cascina Tavijn Teresa is a red wine from the Piedmont region of Italy, specifically from the Monferrato area of Asti, near Verruàs' hometown of Scurzolengo. This wine is a reflection of the passion and effort of the family that produces it, and is made from 100% Ruché red grapes. Some of these grapes come from plots located in the steep hills of Monferrato, while others are purchased, but all are treated with the same care and dedication.
Winemaking
The family practices organic agriculture, and the whole process, from the care of the vines to the harvest, is carried out manually. During winemaking, the grapes are destemmed, keeping the berries whole. They are gently pressed without breaking the skins, just enough to start fermentation with indigenous yeasts and macerate with the skins for 2 months in stainless steel tanks. Teresa, matured for a year in a combination of cement, fibreglass and steel tanks, is bottled unfiltered and no sulphur is added at any point in the process. The name and image of Nadia Verrua's mother, Maria Teresa, adorn the label, designed by artist and family friend Gianluca Cannizzo.
Taste
Cascina Tavijn Teresa is an interesting and fun natural wine from Piedmont. Its semi-carbonic maceration gives it a light purple cherry red colour. On the nose, aromas of blueberry, cherry, gunpowder, flint, smoky minerals and pomegranate can be perceived. On the palate, the flavours of pomegranate juice, cranberry and hibiscus stand out, with a lively and refreshing acidity. The finish is bitter, similar to that of a blood orange, and a slight residual yeasty flavour is perceptible.
