Description
Billecart-Salmon Vintage is an intense and seductive champagne, made from a carefully studied blend that brings out the personality of the great Pinots Noirs champenois. This wine incorporates the elegance and subtlety of the Grands Crus Chardonnays from the Côte des Blancs and a distinctive touch of Meunier from the Vallée de la Marne.
The wine is composed of 85% Grands and Premiers crus, with 62% Pinot Noir, 24% Chardonnay and 14% Meunier. These come from varied origins such as Montagne de Reims, Côte des Blancs and Vallée de la Marne. Fermentation takes place in stainless steel tanks and is matured on the lees in the bottle for 89 months. The wine is disgorged with a final dosage of 3 g/L of sugar.
Taste
Billecart-Salmon Vintage has a pale gold colour with bright yellow highlights and a fine effervescence. On the nose, it offers a delicious intensity of dried fruits and stone fruits (such as fresh hazelnuts and grapefruit pulp). With aeration, this wine develops exquisite pastry notes (raw butter, lemon cream), showing a controlled, pure, refreshing and refined aromatic expression. On the palate, it is a tense and charming tactile pleasure, with flavours of blueberries and cherries, amplified by the delicate texture of a slow, creamy bubble. It is a deeply sculpted Vintage, with a noble and distinctive character, ideal to enjoy to the full with a sea bream, citrus and avocado ceviche or a grilled foie gras with peach, verbena and rhubarb.
