Description
Billecart Salmon Brut Rosé is a champagne made from Pinot Meunier, Pinot Noir and Chardonnay by the Billecart-Salmon winery in the Champagne region of France.
This champagne is made from grapes coming from 300 hectares between the Montagne de Reims, the Côte des Blancs and the Marne Valley cultivated on a slate soil.
Some biodynamic principles are used in the vineyards to produce Billecart Salmon Brut Rosé and the use of pesticides and herbicides is avoided.
Winemaking
The grapes are hand-picked individually and separately. The product from each plot is racked and fermented at a low temperature in small stainless steel tanks. This guarantees a slow process where the aromas are extracted and the maximum expression of the varieties is preserved.
After malolactic fermentation and a second fermentation in the bottle, it will spend 36 months in caves dug into the chalky soil with the perfect atmosphere for this champagne to reach the excellence that characterises it.
