Description

Alvear Pedro Ximénez De Sacristía is a wine that represents the excellence and tradition of the Alvear winery. This sweet, very complex wine is the result of a meticulous winemaking and ageing process, carried out in the D.O. Montilla-Moriles, in the province of Córdoba, Andalusia. The Pedro Ximénez grapes, grown in albariza soils, benefit from an extreme climate, with temperatures that can reach 46ºC in summer, favouring the raisining of the grapes, a key process to obtain musts with high sugar concentration.

Winemaking

This wine is made using "asoleo", a traditional technique where the grapes are spread out in the sun on esparto mats to dry them. This process concentrates the sugars and produces a dense, dark must. The must is then pressed and racked into 500-litre American oak casks located in La Sacristía, the heart of the winery where Alvear's oldest wines rest. Here, the wine ages, acquiring its distinctive character.

Taste

Alvear Pedro Ximénez De Sacristía has a very dark coffee brown colour with a golden rim, which anticipates the richness of its flavours. On the nose, moderately intense aromas of sultanas, dried figs, dried dates and coffee. In the mouth, its texture is soft, smooth and oily, thanks to its medium-high viscosity.
This wine is remarkably sweet, with dominant flavours of dried figs, dates, sultanas, toffee and caramel, balanced by medium-low acidity. It is a full-bodied wine, with no tannins, which contributes to its smoothness and ease of drinking. The finish is long and sweet, with a lingering aftertaste of dried fruits, although it could benefit from a little more acidity to balance its sweetness.
