Presented with a red stamp on the back label that says 'Saca 1/2017,' the January 2017 bottling of the exceptionally old NV Fino Capataz Solera de la Casa revealed an unusual complexity and depth showing old age and at the same incredible balance and elegance. When most people consider Montilla Fino to be less elegant than the ones from Jerez, they surely don't think about wines like this. The wine, produced with Pedro Ximénez grapes, is believed to exceed 12 years of age and is about to start its way into an Amontillado, but the oxidative character is almost nonexistent. 1,800 375-milliliter bottles were filled in this second saca.

Description

Alvear Fino Capataz is an exceptional wine that represents the tradition and quality of the Alvear winery. This wine, belonging to the Montilla-Moriles Denomination of Origin, is made in the Sierra de Montilla Superior Quality, a highly prestigious sub-zone in the south of Cordoba, Spain.
Alvear Fino Capataz is a single varietal wine, made exclusively from Pedro Ximénez grapes. These grapes come from the winery's own vineyards, which cover 125 hectares and whose plantations date back to between 1920 and 1980. The viticulture practised in these vineyards is completely sustainable, avoiding the use of fungicides, pesticides, herbicides and harmful fertilisers, as well as artificial irrigation.
The soil of the region is known as albariza, rich in calcium carbonate and composed mainly of marl, a type of soil made up mostly of limestone and mud. These soils are poor in organic matter, infertile and of simple mineral composition, which contributes to the uniqueness of the wine. The climate of the area is semi-continental Mediterranean, characterised by extremely high temperatures and irregular rainfall.

Winemaking

In terms of winemaking, Alvear Fino Capataz is a unique wine that revives the tradition of the "finos amontillados" or Montilla-style finos, which were traditional several centuries ago. This wine is produced from a base wine of Pedro Ximénez fermented to 15% alcohol (without fortification) in vats, and then biologically aged under a veil of flor for an average of 12 years in the soleras and criaderas system. Fortification is illegal in Montilla-Moriles for the production of Fino.

Taste

Alvear Fino Capataz is a very old fino, biologically aged under velo de flor for an average of 12 years. Due to the advanced age of the solera, this is a fino where the flor has begun to die and expose the wine to mild oxidative ageing. The result is a fino that has begun its conversion process to an Amontillado, maintaining the character of the biological ageing with just a touch of oxidative character.
