Description
Ad Fines, which means "on the edge" in Latin, is born of a passion for the art of winemaking and the pursuit of excellence. Produced only in the best vintages, this wine is a testament to the challenge of making a great Mediterranean Pinot Noir of high quality and risk. Sourced from a rugged terroir, this red is a reflection of its origin, a place where nature and man come together to create something truly special.
The vineyard where this Pinot Noir is grown is clay-limestone, with a depth of no more than 40 cm and a content of up to 40% active lime. Its loamy texture and a basic PH of around 8, together with Triassic and Cretaceous dolomite limestone, make this a special terrain. This karst area, dominated by chasms, caves and burrows, and with remains of marine fossils, is the perfect home for the cultivation of this variety.
Elaboration
This wine is made exclusively from Pinot Noir. Its elaboration begins with a pre-fermentative maceration, followed by a spontaneous fermentation at controlled temperature in stainless steel tanks. This is followed by a post-fermentative maceration. Ageing is carried out for 4 months in new French oak barrels, after which the wine rests in the bottle for a minimum of 30 months, thus acquiring a unique complexity and character.
Taste
Ad Fines is a cherry-coloured wine, intense on the nose, enveloping us with captivating aromas of flowers, red berries, orange peel and undergrowth. On the palate, the ripe, juicy red fruit reveals its Mediterranean origin. The unctuousness on the palate, accompanied by a balsamic touch and fine tannin, gives it a complexity and character typical of the territory. Its soft and silky tannins, together with hints of spices, make it a very elegant red wine.
