A pink and delicious ancestral sparkling wine, the 2021 Roig Boig Ancestral (crazy red) was produced with 10 grape varieties, which he also uses to make as a still wine, mostly Macabeo, Xarel.lo, Sumoll, and Parellada but with Monica, Mandó, Cannonau, Tourbat... This is a gulpable sparkling rosé, with notes of wild berries and herbs and an effervescent palate with lots of freshness. Delicious. There are some 8,000 bottles of this.

Description
Roig Boig Ancestral is a sparkling rosé wine made from Xarel.lo, Sumoll, Mandó, Cannonau, Mònica and Turbat grapes by the Celler La Salada winery in the region of Catalonia.
Roig Boig Ancestral comes from a blend of different white and red Mediterranean varieties, some of which are almost extinct, planted on very deep calcareous clay soils.
These vineyards are cultivated in an environmentally friendly way and with the minimum possible intervention.
Winemaking
Harvesting is done by hand. At the winery, all the varieties used to make Roig Boig Ancestral are gently pressed and the resulting must ferments spontaneously with indigenous yeasts.
Afterwards, it rests for 4 months in stainless steel tanks and is bottled without added sulphites, where it undergoes a second fermentation.
Taste
Roig Boig Ancestral is a sparkling wine with fruity, floral aromas and subtle herbal touches. Dry, fresh and effervescent on the palate, with bright acidity, lingering delight and an effervescent palate with lots of freshness. It's effervescent and fun!
