Description
Agustí Torelló Brut Reserva is a superior cellaring cava made from hand-harvested grapes from the Vall d'Anoia-Foix, in the counties of Barcelona. This cava stands out for its commitment to the environment, being organic and vegan certified, using fining agents of 100% vegetable origin. The composition of this cava is a blend of 45% Macabeo, 25% Xarel-lo and 30% Parellada, a combination that reflects the richness of the region's indigenous varieties.
Elaboration
Agustí Torelló Brut Reserva is made with the winery's own yeasts, selected from their own plots before the harvest, in order to respect as much as possible the expression of the soil of origin. Each grape variety is vinified separately for 28 days at a temperature of 16°C. This cava is aged for 3 years in the bottle with its lees, in the semi-darkness of the cellars at a constant natural temperature of 17 degrees, which contributes to its complexity and character.
Taste
Agustí Torelló Brut Reserva is a classic, fresh and smooth cava. It has a pale straw yellow colour with greenish reflections and fine, persistent bubbles. On the nose, it is clean and very fruity, with hints of apple, caramel notes and a background of fresh herbs and menthol balsamic touches. On the palate, it is elegant and balanced, with notes of ripe apple and syrup. The carbonic is very well integrated, offering an excellent sugar-acidity balance and a long, delicate aftertaste.
This cava is ideal to enjoy at any time of the day, being especially recommended for appetizers, fish, seafood creams, white meats, goat cheeses and desserts. Its alcohol content is 11.5% vol., with an acidity of 6 gr/L (tartaric) and a sugar content of 6 gr/L added with organic grape must.
